
Here's what you will need:
100g Grassfed pure butter [raina guna salted anchor butter]
3tbsp Raw cane sugar (I tried 2tbsp RCS with 1tbsp jaggery-nice!)
Chia seed gel (1tbsp chia seed soaked in 3tbsp water)
1tbsp cocoa powder
1/2cup rice flour
2tbsp coconut flour (optional; you can substitute with rice flour) [raina gantikan dengan tepung beras]
A pinch of himalayan salt
Optional flavours/add-ins
1/2 tsp agros natural coffee (just because I so love this😙)
Rice puffs/nuts/raisins [raina guna kurma - buang biji, rendam dan cincang]
Mix butter and sugar till soft. Add in chia seed gel. Mix dry ingredients separately. Add to the butter-sugar mix gradually. Add nuts/raisins etc if you prefer gradually. I usually just eyeball it; around 1-2tbsp as we don't want the batter to be too dry.
Scoop out the batter in small round sizes n make it thin to be crunchy, slightly thick to be soft.
Bake at 170degrees for about 10-15min depending on your oven.
Makes about 16-18 medium sized cookies.
Kalau nak chewy scoop besar sikit.
Kalau nak crunchy, scoop kecik je.
Adunan dia akan melt walaupon masa scoop nampak membumbung.
